Îles Flottantes: New Favorite!

 


Îles flottantes, also known as "floating islands" or "floating islands in crème anglaise," is a classic French dessert that consists of delicate poached meringue floating on a pool of creamy custard.

The meringue part of the dessert is made by whisking egg whites with sugar until they form stiff peaks. The mixture is then shaped into small, round or oval shapes and gently poached in simmering milk or a sugar syrup. The poaching process cooks the meringue, giving it a light and airy texture.

Once the meringue is cooked, it is carefully removed from the poaching liquid and placed on a serving dish. The poaching liquid is often flavored with vanilla, orange zest, or other aromatics, which infuses the meringue with subtle flavors.

The custard, known as crème anglaise, is the accompanying sauce for the floating islands. It is a smooth and creamy sauce made with egg yolks, sugar, and milk. This mixture is gently cooked until it thickens, creating a velvety custard. Crème anglaise is often flavored with vanilla, which pairs beautifully with the meringue.

To serve, the poached meringue islands are placed on top of the pool of crème anglaise, creating the illusion of floating islands. The islands are delicate and ethereal, with a soft texture that contrasts with the silky smoothness of the custard.

It can be garnished with caramel sauce, toasted almonds, or a sprinkle of grounded pistachios for added visual appeal and flavor.
